I think a lot of people in the cookie world are confused about the difference between the margarine and the shortening. The shortening is the item that you are cutting with a food processor. The margarine is the item you are cutting with a food knife. The difference is that shortening is a liquid, while margarine is solid. Margarine burns if you use it on a hot stovetop, while shortening does not.
